Dessert III ; Dorayaki

Dorayaki is a delectable snack consisting of a sweet filling sandwiched between two fluffy pancakes and is by far one of the most popular wagashi (traditional Japanese confections). Although its origins are thought to be ancient, the popular dessert was originally manufactured as a sandwich by a Tokyo-based confectionary named Usagiya in the early 1900s.

The term "dorayaki" has been used to describe two little pancake-like patties cemented together with sweet azuki red bean paste known as "anko." Apart from the traditional red bean filling, you can now choose from a variety of flavours such as white bean paste, matcha green tea paste, and sweet potato and chestnut cream, or go for an interesting East-meets-West snack by filling your dorayaki with custard cream, whipped cream, or a decadent chocolate-and-strawberry combination.

Ingredients to make dorayaki :
  • All purpose flour
  • Baking powder
  • Sugar
  • Egg
  • Honey
  • Rice vinegar
  • water
  • Azuki beans paste (sweet red bean paste)
How to make dorayaki :
  1. Make batter : Set aside the sifted flour and baking powder. Whisk together the egg, sugar, honey, and rice vinegar until the colour is pale and frothy. Fold in the flour until there is no more visible flour. Refrigerate the mixing bowl for 30 minutes after wrapping it in plastic wrap.
  2. Fry the batter : Scoop the batter onto a hot plate set to 320°F (160°C) and cook for about a minute on one side, or until bubbles appear. Cook for a minute on the other side before flipping it. Remove the cakes from the oven and place them on a cooling rack or dish. You can use a sandwich press or a frying pan instead of a hot plate.
  3. Sandwich sweet Azuki bean paste : To sandwich the sweet azuki bean paste, spread it on one dorayaki cake and top it with another dorayaki cake.
